Who is ICE?

The Institute of Culinary Excellence is an Australian top tier, high–level cookery college and Registered Training Organisation (RTO, number: 40748) that offers culinary career training to apprentice chefs and new entrant students to the industry.

We have some of the best chef teachers in the industry and utilise world-class training kitchens.

We are proud to be a Skills Assure provider!

Unlike other training organisations and colleges, we offer personalised, tailored-made training for each individual student that best suits their needs and importantly, the needs of their workplace.

We offer our apprentices the opportunity of a lifetime with our ICE Apprentice Chef of the Year Award that sees our best ICE apprentice travel overseas on a culinary trip of a lifetime to visit and dine at one of the world’s best restaurants.

We continually push the boundaries at ICE and deliver our training in a modern, innovative and exciting way. Our programs include excursions to off-site farms, markets, factories and visiting local producers.

Also each year we reward our final year students with a big graduation party which is definitely the highlight of the ICE school year and one not to be missed.

SIT20421 -Certificate II in Cookery

– Pre-Trade Program

This twelve week part time course is suitable for people wishing to start their culinary career. It is the basic level entry course for a culinary career and it is a good ‘pre-trade’ foundation course for those considering an apprenticeship in commercial cookery or working in a professional kitchen. It covers lots of information including: basic food preparation and knife skills, food hygiene and cleaning, workplace health and safety, working with others, storing food items correctly and basic methods of cookery. There are some other food subjects which are really interesting and the course also combines a great environmental sustainability class which sees ICE students plant, maintain and grow vegetables and herbs in both of ICE’s two market gardens. For theory classes, we try to take students out on several site visits to markets, farms and other interesting places so it’s not just sitting in theory rooms for hours!

SIT30821 Certificate III In Commercial Cookery

– Pre-requisite: Registered Queensland Apprentice Chef

Come join the ICE revolution! If you are currently employed as an apprentice chef or are about to be, then ICE would love to train you! Our apprentices work at the some of the top 10 restaurants in Brisbane and are some of the best talents in the industry.
Our teachers are experienced, enthusiastic and very motivated about teaching and mentoring our students to become the very best chefs they can be. ICE welcomes any apprentice from any walk of life or any restaurant, cafe or food establishment in Brisbane and SE Queensland and we guarantee to teach you everything we know. Our classes are relaxed, fun and inspirational and everyone at ICE goes above and beyond to help.

SIT40521 Certificate IV in Kitchen Management

This high-level exciting cookery training program is suitable for anyone who would like to continue further education in the area of commercial cookery and to become a highly skilled chef with management qualities. This course is open to chefs who are currently employed and working in Queensland. Following on from a Certificate III in Commercial Cookery, this program takes chefs on a journey into a more senior supervisory role in the kitchen. SIT50422 Diploma of Hospitality Management

A wonderful course for anyone wishing to progress in their career and become a knowledgeable and respected manager of a busy kitchen, restaurant, cafe, hotel or other hospitality business both in Australia and overseas. This course is open to qualified chefs and hospitality front of house superstars who are currently employed and wishing to study higher education in the area of Hospitality Management. This could be for career advancement to management and supervisory roles, job promotion to Executive Chef or Executive Sous Chef or in preparation for opening your own food business. An ICE workplace assessor will visit you in your workplace and discuss with you how this program is best suited to you, as every individual is different.
