Student Requirements
Students attend a combination of theory and practical classes at our Coorparoo campus and combine self-paced project work and home research to complete their qualification.
As part of the program, they must also undertake work placement at a local restaurant, hotel or hospitality establishment, which is arranged by ICE. The Institute of Culinary Excellence International Program provides accredited training in the following qualifications:
SIT30821 Certificate III in Commercial Cookery
This program is the traditional trade qualification for students wishing to become a pastry chef or pastry or bread specialist. The course includes the basic subjects from the Certificate III Commercial Cookery including food hygiene and safety with basic cookery methods.
SIT40521 Certificate IV in Kitchen Management
This program is similar to the Certificate III in Commercial Cookery program, however it includes more management leadership subjects such as finances and budgets, human resource management and operational planning. Offered over eighteen months, it includes classroom.
SIT50422 Diploma of Hospitality Management
This program is a senior management qualification, suitable for individuals who are planning on pursuing a career as an executive chef or hospitality manager. It includes business management and leadership subjects as well as commercial cookery electives.

Enrollment Application
International Student
- Ensure read the international handbook carefully before applying.
- Email your student application form to admin@theice.edu.au. Obtain an application form from one of our agents or download the form now.
- Applications are reviewed by ICE staff and a video interview may be conducted.
- Considering your application and interview outcome the applicant may be offered a place in the course.
- A letter of offer will be sent for you to accept.
- Once signed by the student and returned to ICE, the student will be admitted to their course and a Confirmation of Enrolment (CoE) will be issued.
- The equipment and the uniform invoice will be issued. This will have to be paid before entry into Australia.
- Student finalises VISA application, including health insurance requirements and payment plan. (health insurance must cover the full duration of the course).
- Once the student has arrived in Australia and made their first payment of tuition fees, they will be enrolled into the required units of the course.
