Students attend a combination of theory and practical classes at our Coorparoo campus and combine self-paced project work and home research to complete their qualification. As part of the program, they must also undertake work placement at a local restaurant, hotel or hospitality establishment, which is arranged by ICE. This program is the traditional trade qualification for chefs, including food safety and hygiene; all practical cookery subjects, menu planning and costing; and diets and nutrition Offered over one year, it includes classroom theory, kitchen practical tuition and work placement.
This program is the traditional trade qualification for students wishing to become a pastry chef or pastry or bread specialist. The course includes the basic subjects from the Certificate III Commercial Cookery including: Food hygiene and safety, along with basic cookery methods, but it then branches out into specialised patisserie subjects such as: Pastry, cakes, tortes, yeast based products, petit fours and chocolate confectionery. It also includes preparing espresso coffee and some customer service subjects which could be useful for students who might work in a cafe or patisserie in the future.
This program is similar to the Certificate III in Commercial Cookery program, however it includes more management leadership subjects such as finances and budgets, human resource management and operational planning. This program is a senior management qualification, suitable for individuals who are planning on pursuing a career as an executive chef or hospitality manager. It includes business management and leadership subjects as well as commercial cookery electives.
